Tuscany Cooking classes.


Choose to spend a cooking vacation in Tuscany at Centanni


We organize Tuscan cooking classes for 8-people groups from October to March. So you have the opportunity to combine a holiday with a cooking school, by preparing traditional dishes together with our teaching chef: from home-made pasta to typical cakes.

In the week from Saturday to Saturday 3 days are devoted to the classes. 4-hour lessons every day and 1 day visiting the marvellous Chianti countryside.

In particular we will see one of the most beautiful wine-growing farms and its cellars, and we will taste the excellent wine they produce.

The cooking lessons are held in English or in Italian. Here is a sample from a real lesson:

Cooking classes 1st lesson Menu

Menų:
  • Ravioli with butter and sage
  • Stracotto dei Medici from the 17th century Sautéd vegetables
  • Dessert Tiramisų
Ravioli with butter and sage

Egg pasta:
  • 500 gr of "00" flour
  • 4 eggs
  • a pinch of salt
Filling:
  • 500gr of ricotta cheese
  • 100 gr. of spinaches
  • 1 spoonful of egg
  • 1 egg
  • grated parmesan cheese
  • nutmeg Butter
Sage salt and pepper to taste.

Stracotto dei Medici from the 17th century Sautéd vegetables
  • 1kg of beef round or topside (haunch side)
  • 1.5 kg of peeled tomatoes
  • 3 glasses of red wine
  • 1 carrot
  • 1 onion
  • 1 celery rib
  • 100 gr of almonds and pine nuts
  • 100 gr of currants
  • toasted bread and small pepper to taste
  • salt and pepper to taste

Sautéd vegetables:
  • 8 spinach pellets
  • 3 garlic cloves
  • olive oil
Tiramisù dessert:
  • 500 gr of mascarpone cheese
  • 200 gr of sugar
  • 4 egg yolks
  • 500 gr of ladyfingers
  • 5 watery coffee cups
  • chocolate pieces
